The focus was on speciality coffees with Bs2 students, as a complement to their “Managing Beverage Operations” course.
Our very hospitable coffee experts, Simon and Quentin from Café Coutume, https://www.coutumecafe.com/ , explained how exclusive speciality coffee beans are sourced from Brazil, Colombia, Ethiopia and other tropical regions, to finally be roasted in Paris, following strict quality standards.
One of the highlights of the visit was the cupping session, featuring blind tasting of 6 different coffees, followed by a presentation by Quentin, Coutume’s torrefaction specialist.
Latte arte session was next, taking place in Café Coutume’s brand new training center in Romainville.
Looking very much forward to AIM’s next activity, for the Arts de la Table course : a visit of the Manufacture de Sèvres.
